Potato Rostis

Ingredients

400g Maris Piper potatoes peeled and coarsely grated

1 medium egg beaten

1tsp plain flour

1/4 tsp baking powder

1/2 small onion finely chopped

6 sage leaves, 2 finely chopped, 4 whole

3tbsp oil for frying

 

Method

1. Squeeze any excess water out of the grated potato.

2. In a bowl mix the potato, egg, flour,baking powder, onion and chopped sage and season.

3. Heat 2 tbsp of oil in a non stick frying pan, spoon in the mixture to make 4 rostis, flattening them into disk shapes with the back of a spoon. Fry for about 5 mins on each side, until golden brown.

4. To serve, heat the remaining oil and fry the whole sage leaves for about 20 seconds until crisp. Drain on kitchen paper.
